Sugar ‘n’ Spice Indulgent Sticky Toffee Muffin

200ml double cream

700ml whole milk

3 tbsp cornflour

4 large egg yolk

200g caster sugar

1 tsp vanilla extract

Alternatively, you can buy premade custard and heat in the microwave.

  1. Put the cream and milk into a large pan and gently bring to just below boiling point. Meanwhile, in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly.

  3. Remove the muffin from all of its packaging, including the paper case, place in a microwaveable bowl and heat for a maximum of 30 seconds.
  4. Pour over the custard and serve immediately.
